A VOLTE Restaurant & Wine at Villa Anitori offers an enjoyable experience: our cuisine includes both fish and meat, as it is typical of our region, with a touch of innovation.
Dinner is served within the charming atmosphere of our vaulted room, that was once upon a time a winery.
Our menu usually changes on weekly basis, according to the seasonality of the various products and the availability of local produce.

“A Volte Restaurant & Wine”, run by Chef Paolo Paciaroni, is a gem that you can’t miss. In every dish there is the story of our territory, in a contemporary way.
Every day you can dine in the romantic and elegant atmosphere of majestic brick vaults, in the hall of the ancient cellars. In summer you can dine even outdoor, in the beautiful atmosphere of the “Fountain Square”.
Large spaces, spaced tables: once seated you can dine without a mask and without barriers in complete safety, relaxation and serenity.
Open every evening for dinner (20:00 – 22:00).
Saturday and Sunday also open for lunch (12:30 – 14:30).

HORSE STABLE HALL
What was once the horse stable, as witnessed by the presence of a superb brick crib, has been converted in a rustic hall, perfect to host small groups up to 30 people.
The largest hall is dominated by huge windows offering an amazing view over the rolling hills and the beutiful countryside. Perfect for larger events, it can sit up to 260 people

“I am a cook, or better, an artisan of taste”
I was a child… one of those who dream a lot. When I was 9, I already wanted to be a cook. In the 80’s cooking was not yet so much bespoke; a cook was seen pretty much as a surly charachter, a person filled with problems who lived on the verge of break-down with an exhausting workload and very long hours. I was not scared of that, on the contrary, I was curious about it. It was indeed out of curiosity that I used to stand on a stool to reach the kitchen shelf and watch my mom bake the cake for our breakfast. The flavour that came from the oven was such a nice smell and seeing the cake grow was something extraordinary. Following my passion at the age of 15, I started working in a pizzeria ‘round the corner as a dishwasher. As I finished my studies in high school, I enrolled in a professional class in hotel school and eventually graduated in 1998 with full marks. Started off in a 4 star hotel in my home town and ever since I’ve been working in a kitchen. Among my main professional references are my experiences in 4 stars and 5 stars hotels in Lombardy, Trentino, Val Badia and Tuscany. The chance to work in my native land, the emotional strings that link me to my home territory, where there is still a direct relationship with local farmers, convinced me to take on the responsibility to lead the kitchen of Villa Anitori’s restaurant.
In my work I put a lot of passion for everything that is nice and tasty in eno-gastronomy, aiming at creating dishes that can give you a feeling of their background and that can give you an emotion. In every dishI try to convey the story and the peculiar properties of its ingredients.
Above all, passion is the single ingredient that I always use in my creations.
Within the majestic seventeenth-century villa – restored with great care and elegance, and retaining many of its original architectural features – 10 exclusive rooms and suites have been revealed from the original spirit of the building. The original glamour of the house still radiates from its ancient walls and combines perfectly with sophisticated, modern details and stylish facilities.
Treasures yet to be discovered
This beautiful part of Le Marche identified as the province of Macerata is a land rich in hidden treasures, still unspoilt by mass tourism. Locals are very welcoming and genuinely happy to share with visitors the incredible heritage that these places keep. Every season will show its own different shades.
